Lemon Persian Lamb- Slow Cooked

There is nothing like coming home to lamb shanks in the slow cooker. This dish only took 10minutes to prep in the morning ( or the night before ????) and switch on low???????? It is also loaded with Vegetables, herbs and spices! Slow cookers are the best kitchen appliance to have when life gets a little busy! Here is what I do, to be more time effective with eating well in a busy life; I meal plan I choose meals that are time appropriate each day, according to what time we walk in the door of an evening. I prep as much as I can- this often means either prepping on a weekend, or the night before. I don’t let the prep and planning become time consuming- 10-30 minutes max. Zuchini and Corn Fritters

On a Wednesday night, my daughter goes to netball training. As a busy mum, I share the responsibility of getting her and her friends to and from training with another other busy mum. Its what all busy mum’s should do…share the load! On one particular night after training, I bought back my daughters friends to have dinner. These zucchini and corn fritters where what I served as one of the girls is vegetarian. And what a hit they where. I promised the girls I would give their mum the recipe, so here it is! Banana and Cinnamon Loaf

Rain, hail or sunshine, Banana bread/loaf is one of those ‘treats’ that always goes down so perfectly with a nice cup of tea. This Banana and cinnamon loaf is no exception.  In fact, my Daughter is not a huge banana fan but loves cinnamon, so this get her tick of approval! Straight into the lunchbox it goes!! Oh, if you could only smell this loaf when it came out of the oven…divine. The best part about this banana loaf, is you can place all your ingredients in the food processor or blender, whiz it all up, pour into your loaf pan and pop in the oven…So simple, quick to prepare, and like all my recipes, full of nutrition. Preparing some breakfast options the night before, or at the beginning of the week, will save you loads time in the mornings when your juggling everything to get yourself, kids or who ever out the door! Buckwheat Pancakes- Very simple, light, fluffy, gluten & Sugar FREE

These simple fluffy pancakes are not only sugar and gluten free, but they only require a few simple ingredients and are quick to make- great for a simple weekend breakfast, or make up a double or even triple batch on the weekend for an even quicker breakfast on your busy weekday morning- all you need to do, is heat and eat! No sugar was used in these light and fluffy pancakes, but if you add maple syrup and/or fruit to your toppings, this will give you some sugar, but not refined. The maple syrup and fruit will give you the sweetness you may yearn for, but with the added bonus of fibre and nutrients to nourish and satisfy! The buckwheat flour gives it a lovely nutty flavour and you can use whatever milk you can tolerate- this recipe has almond milk, but you can vary this. Get creative with your toppings. Jam Drop Coconut Biscuits

These lovely biscuits are more like a coconut macaroon, are gluten and dairy free, also Paleo friendly. You can be made with any jam, but I like to make up my own quick and low sugar version, which is super simple, quick, delish and nutrish! I have used my own apricot jam,( I ran out so a few made with raspberry jam). Use what you like as it is only 1/4 teaspoon per biscuit. Chocolate Cake – Gluten and Dairy free, Paleo Friendly

Who doesn’t love chocolate cake?  Well, if you have intolerances or allergies it doesn’t mean you have to miss out either….You can have your cake and eat it too! I am one of ‘those’ people who can’t have certain foods, some are by choice because I know my body feels better without it eg; dairy, yeast etc but gluten for me is something my body does not react well too, like many today, so I avoid it completely. I am more a savoury kinda of girl but every now and then I enjoy a piece of cake and this one certainly hit the spot. It was my husbands birthday and it was school holidays, so my Daughter and I thought we would make a delicious chocolate cake to help celebrate this occasion. This one was certainly the bomb!
