Herby Chicken and Vegetables Tray Bake

Tray bakes are such great way for the busy cook to prepare a roast in much quicker time and have  leftovers for quick lunches and dinners over the following days. It is also a great way to cook for a large crowd, especially when you are short on time. You simply place all the ingredients on a tray, drizzle with a little olive oil, sprinkle some salt and herbs and bake! It’s that simple. You can vary your ingredients, using different proteins and vegetables. For example; use pork chops with Sage,  or Lamb fillets with Rosemary. Even fish fillets, with fennel and dill. Whatever your choice of protein, you may need to vary your cooking time, due to the thickness of your meat. Store your leftovers in glass sealed dishes and place in the fridge for a quick meal over the following days. Tray bakes are a staple in my home and a must for the busy cook.
