Spring Chicken & Vegetable Tray Bake

We are well into springtime down in the southern hemisphere. The blossoms have well and truly bloomed, I’m starting to see fruit budding on my trees, the weathers starting to improve ( albeit a dreary rainy day today as I write this email- hey I’m in Victoria!) and the days are getting a little longer.
For me personally, its a time I spend in my vegetable patch harvesting those end of winter crops and start clearing, planning and planting for summer crops.
Spring time is a busy time for gardeners.
Ok, I know its not everyone’s cup of tea, but I really do love getting out into my garden, digging in the dirt and harvesting the rewards of my labour of love.

I really do love springtime. 
It represents new life and warmer weather and after what has no doubt been a challenging year for many, we all need a little more sunshine in our lives, don’t you agree?

My family and I decided to get away for a last minute long weekend last week. We live in regional Victoria and have just had severe covid restrictions, lighten. So we decided to jump in our car and support a nearby tourist destination and enjoy some long awaited freedom and release of the same four walls.

It was truly so nice!

One thing I did when we got home on Sunday evening, is go out into my garden for my return home inspection ( yes this is my little return home from a break routine I do every time!). To my great pleasure I found an abundance of broccoli, peas and spring onions ready to be harvested.
I grabbed a few other ingredients I had on hand and popped it all on a tray, placed in my oven and in less than and hour later I had a beautiful spring tray bake.

Think some chicken, broccoli, peas, spring onions, asparagus, new potatoes, lemon and some fresh herbs.

Ingredients
  • 6 chicken thighs or pieces
  • 150 ml chicken Stock
  • 6 sprig of spring onions, sliced
  • 1 medium head of broccoli, chopped
  • 1 cup of fresh or frozen peas
  • 1 bunch fresh asparagus
  • 6-8 small new potatoes any potatoes would be fine, but you may need to use less and quartered.
  • 1 small lemon, quartered
  • 1 small handful of fresh oregano & or thyme
  • 1 tbs olive oil
  • Salt and pepper, to season

Instructions
  1. Preheat your oven to 180C ( fan forced). In a hot pan on the stove, , add your oil, heat and your chicken pieces to lightly brown. Place into oven tray.
  2. Add your potatoes and fresh herbs and pour in your chicken stock. Place in hot oven for 30 minutes.
  3. Prepare your beautiful spring vegetables. Cut into pieces and set aside. Also quarter your lemon.
  4. Remove the tray from oven after 30 minutes and place your lemon, asparagus, broccoli and spring onions into tray. Mix well and place back into hot oven for a further 15 minutes.
  5. Remove tray again from oven and toss through your peas, returning to the oven for a further 5 minutes. Then serve.
