Jamie’s Chicken & Herby Sauce

Ok, I know it’s not such a great picture but trust me when I say, if you like chicken and you like herbs, this recipe is the bomb.

This recipe is taken from a Jamie Oliver recipe, with a few tweaks and additions, from me! The best part about this recipe, is it is so simple, fresh and only takes approx. 15-20 minutes from start to finish, which is great for those nights when we are getting home from work late and need to get something on the table ASAP.

So, apologies for the bad photography, but I was super hungry and needed to eat….when this grounded chic is hungry, well, there is no time for setting up photo shoots!!

This recipe is Low Carb, for those who are looking to lower the carbs load and if you remove the feta, it will be paleo friendly. I do hope you enjoy it as much as my family does.

Ingredients
  • 4 Chicken Breast Fillets
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup White or red wine vinegar
  • 1/2 Lemon, juiced
  • 1-2 cloves fresh garlic, grated
  • Dried chilli flakes * add as little or as much as you desire
  • 6 cups Mixed green vegetables * I used Brocolini, Beans, Fresh Peas, Zuchinni and sugar snap peas
  • 1 small Bunch of fresh mint
  • 1 small Block of goats feta

Instructions
  1. Place a saucepan on the stove and bring to the boil. In a dish, add half of your olive oil and vinegar, all your garlic and chilli flakes, with salt and pepper. Score your chicken fillets, then place chicken in your dish with marinade and coat thoroughly.
  2. Heat a pan with a little oil, then add your chicken to the pan and brown on both sides. Cook on a moderate heat and cook until golden brown and cook through. This will take anything from 10-15 minutes depending on the thickness of your fillets, but don't over cook, as this will dry out your chicken.
  3. While your chicken is cooking, roughly chop your veggies and place in the saucepan of boiling water and simmer for approximately 3-5 minutes.
  4. In a small blender/processor, add your remaining olive oil, vinegar, lemon juice and fresh mint. From your saucepan, grab a ladle of your cooked vegetables, with a ladle of the water from the pan and add this to your blender/processor, then blitz till well combined. Add a little more olive oil, if sauce is too thick. This is your herby sauce!
  5. Remove your chicken from the pan, then rest for a minute. While your chicken is resting, strain and serve your vegetables, then slice your chicken fillets and place on top of your chicken. Ad a generous spoonful of your herby sauce over your chicken, then sprinkle with your feta. Serve and enjoy!
