Jam Drop Coconut Biscuits

These lovely biscuits are more like a coconut macaroon, are gluten and dairy free, also Paleo friendly. You can be made with any jam, but I like to make up my own quick and low sugar version, which is super simple, quick, delish and nutrish! I have used my own apricot jam,( I ran out so a few made with raspberry jam). Use what you like as it is only 1/4 teaspoon per biscuit.

Ingredients
  • 125 Mls Coconut Oil, melted
  • 3/4 cup Coconut sugar
  • 3 egg, preferably free range & organic
  • 2/3 cup Coconut Flour
  • 1 cup Dessicated coconut
  • 2 tsp Baking Powder
  • 2 tbsp Vanilla protein powder Optional extra for a protien boost. otherwise use 1 teaspoon of vanailla been paste
  • 3 Tbsp Jam of your choice

Instructions
  1. Preheat your oven to 180C. Line a baking tray with baking paper. With electric beaters, beat melted coconut oil( cooled) and sugar together for 3 minutes, to well mixed. One at a time beat in eggs. Making sure each egg is well incorporated before adding the next.
  2. Remove beaters then add in your dry ingredients. Mix gently, until well incorporated.
  3. Roll one tablespoon of biscuit mixture in your hands and roll into a ball. Place on the tray. and press flat, not too flat. Do this to all mixture. Press your thumb into the middle of each biscuit mixture then add a little jam, approximately 1/4 teaspoon each.
  4. Place your prepared biscuits into the oven and cook for approx. 12minutes. Allow to cool for 30 minutes before eating. You will need to be patient, as the jam will be extremely hot and can scold your mouth! Enjoy!
