Herby Garlic Dressing

green-salad-dressingI love a good salad dressing- It can lift any dish, from being very plain and simple to alive and exciting.

You don’t have to always use it just on salads either. You can drizzle it over cooked vegetable, or grilled meat to give it a lively boost of vitamins, minerals and flavour.

Below, I have listed one of my favourite simple dressings you can quickly whip up once a week, add into a sealed jar and keep in the fridge to take that dish from very simple to an extra added delish and nutrish!

This dressing has lots of herbs, garlic, good fats and more- a little nutritional powerhouse!

Ingredients
  • 1/4-1/2 cup fresh coriander, basil and parsley *Depending on how herby you like it!
  • 1-3 cloves fresh garlic *Depending on how garlicy you like it!
  • 2 Tsp Raw Honey
  • 1/2 Lemon or lime, juiced and rind
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Apple Cider Vinegar I use Braggs, as it traditional fermented and has all the 'good' bits left in it!
  • salt & pepper to season.

Instructions
  1. Add all ingredients into a blender or food processor and blitz up until well mixed and blended.
  2. Serve on any salad, drizzle 1 tablespoon on steamed vegetables or even on some grilled fish or chicken. Store in a seal jar in the fridge for up to 1-2 weeks. Give a good shake before using.
