Chocolate Berry Fudge

This Chocolate fudge is not only simple and delicious, but it’s takes little time to make, it’s packed full of goodness with the bonus of juicy berries, to break through the richness.

Did I mention it’s quick to make? The only challenge is you have to wait for it to set…do you think you can wait?

Ingredients
  • 1 cup Melted coconut oil
  • 1/2 cup Almond butter you can use any nut butter you like.
  • 1/2 cup Raw Cacao
  • 1/2 cup Dessicated coconut
  • 1/2 cup maple syrup
  • 1 cup fresh or frozen berries any berries will do, I use a mixture of frozen berries.
Servings:
Instructions
  1. In a small tray (approx. 15cm x 20cm) line with baking paper and spread your berries.
  2. Using a small hand blender, add all your remaining ingredients and blitz till well blended.
  3. Then pour this mixture over your berries, spread evenly, then place the tray in the freezer for at least 30 minutes.
  4. Once firmly set, remove from pan and cut into wedges, or break up any way you like! I keep mine in the freezer, to keep firm and easy to grab when the urge takes hold. Enjoy!
