Chilli Con Carne

Mince is the perfect budget friendly meat. Pimp it up in this dish, with lots of diced/grated vegetables and beans and you have yourself a little nutritional power house of protein, vitamins and minerals and cheap to boot!

I love a dish that not only is budget friendly, nutritional diverse but also one I can cook up in bulk, to portion up to either freeze or place in the fridge for another night.  This dish is also one I can pop in the slow cooker, or on the stove in the morning, and let it simmer away, while you go about your business.

I like the diversity of Chilli Con Carne, as mentioned above, if cooked in bulk, I can ‘rehash’ it into other dishes on another night. For example; serve on baked potatoes, with a little grated cheese or sour cream and steamed spinach or slaw. OR  add a few spoonful’s into a saucepan, add in another tin of tomatoes and beans, then heat. This can be served on some corn chips with guacamole and grated cheese, for quick nachos for either a lazy dinner or hearty snack. Even use in burrito’s or tortilla’s/taco’s.

Now, chilli is not always well received by the young ones in the house, or even some adults struggle with it, but just adjust the amount of chilli to your cooking, to your ‘heat levels’ desire. I have made this recipe mild, because my daughter, can’t handle it too hot, but I always add either fresh or dried chilli into my Hubby’s and mine, when serving.

I always like my Chilli Con Carne served with a little brown rice, a fresh salad and of course a little mashed AVO!

Ingredients
  • 1 kg quality Beef Mince
  • 1 onion, sliced
  • 2 Celery stalks, sliced
  • 1 large Carrots, grated
  • 1 Red Capsicum, finely diced
  • 1 cup either, spinach or kale, finely chopped
  • 1 Can either Black Beans or Kindey Beans
  • 2 Tbs Tomato Paste
  • 1 Can Chopped Tomatoes
  • 1 cup Chicken or Beef Stock * Preferably homemade
  • 1-2 tsp each, of ground cumin, corriander and smoked paprika
  • 1/2 tsp chillli powder or flakes * add in as much or as little chilli as you can handle.
  • 2 cloves fresh garlic, chopped
  • Salt and pepper, to season

Instructions
  1. Chop/grate up all you vegetables.
  2. In a hot pot, I use a heavy based pot, which works better when cooking a slow braise, add a little oil and sauté your onions and celery, to soft. Add in your garlic and beef mince and brown. Season with salt and pepper.
  3. Add all other vegetables, your spices, Beans, tomato paste, and tin tomatoes. Mix well. Then add in your stock and stir. Bring to a boil, then turn down. Simmer with lid on, on top of your stove on a very low heat for at least 1 hour. **If using a slow cooker, on low for 6-7 hours. high for 4 hours. Note, if using your slow cooker reduce your stock to 1/2 cup of stock.
  4. I love my Chilli served with a little brown rice, a fresh salad and a quick mashed Avocado and squeeze of lime. Simple, Delish, Nutrish!
