BUCKWHEAT PANCAKES- gluten & sugar free
These light and fluffy pancakes are not only gluten free but have no added sugar, too. They require only a few ingredients and are simple, quick, most definitely delish & nutrish!

Ingredients
  • 2large eggs, preferably free range & organic
  • 1cup Buckwheat Flour
  • 2/3cup Almond Mlikyou can use whatever milk you tolerate
  • 1tsp Baking Powder
  • 1/4tsp Salt
  • 1 tsp Coconut Oil*you can use other oils, but I prefer coconut oil for these pancakes
Instructions
  1. In a bowl, add your dry ingredients- buckwheat flour, baking powder and salt. Whisk together.
  2. in a separate bowl or dish, whisk together your milk and eggs. then add your liquid ingredients to your dry ingredients and whisk till a smooth batter forms.
  3. Place a frying pan on stove and heat with your coconut oil. Once heated to a moderate heat, use a large spoon or small soup ladle and pour batter ( approx. 2 tablespoons or 1/2 soup ladle) into pan and fry on one side for approximately 30-40 seconds or until bubble start to appear, then gently flip over and cook the other side for same time.
  4. Transfer your cooked pancakes to a warmed plate and cook the rest of your batter. Once you have cook all the pancakes serve with your favourite toppings
