Roasted Beetroot Dip

  HANDS UP WHO LOVES BEETROOT? I love it! In fact, when I was a little girl, one of my favourite sandwiches was a beetroot sandwich and my grandmother always had beetroot on hand for when I would come a stay with her! True story!   I grew up with a Dad who grew much of our own produce and now as a ‘grown up’ I’ve followed in his footsteps and do the same for my family.  Currently in my garden I have an abundance of beautiful beetroots. I grow different varieties, even golden in colour, but the deep blood red varieties are my favourite. I picked a big bunch of beetroot over the weekend and made a jar of my delish roasted beetroot dip and honestly, I just love it and hope you do too. Mango Bliss Balls

Schools back and that means lunch boxes. At my daughters school( like many schools) it is nut free, so when your short on time and wanting to whip up some quick, healthy and nut free snacks, then go no further. Mangoes are a favourite in my family and we always have a bag of frozen mangoes in the freezer to add to smoothies. Banana and Cinnamon Loaf

Rain, hail or sunshine, Banana bread/loaf is one of those ‘treats’ that always goes down so perfectly with a nice cup of tea. This Banana and cinnamon loaf is no exception.  In fact, my Daughter is not a huge banana fan but loves cinnamon, so this get her tick of approval! Straight into the lunchbox it goes!! Oh, if you could only smell this loaf when it came out of the oven…divine. Lemony Tuna and Cannellini Dip

I recently had some girlfriends over for a little get together of ‘shits and giggles’! Don’t you just love it when you have an impromptu gathering of a few girlfriends, where you have a few nibbles to snack on, a bottle of bubbles and lots of chatter and laughs? Well, as I said, it was impromptu and I had a short time frame to whip something on a platter for us to nibble on.
