Quick Roast Greek Lamb and Vegetable Tray Bake

In Australia, we love our lamb, we love a roast and at GC headquarters, we love a kitchen hack! This simple shortcut to achieving a roast lamb with lots of tasty vegetables and Greek flavours in around 45 minutes, is always a hit on a week night. 

The secret to achieving this is in a smaller period of time is to;

  • use either lamb chops or fillets
  • to chop up your root vegetables small
  • a really hot oven.

Tray bakes are also convenient and easy when you can place everything on one tray- less time, less dishes and so simple.

Ingredients
  • 6 Lamb chops or 3x lamb fillets * I used forquarter chops
  • 2 large Roasting potatoes, diced small
  • 1/4 large Pumpkin, diced small
  • 1/2 Red Capsicum, roughly chopped
  • 1/2 Red onion, sliced
  • 1 Bunch Broccolini, chopped in half
  • Green beans
  • 1/2 cup Goats feta, crumbled
  • 1 tsp Smoked paprika
  • 2 Tbs Rosemary, chopped
  • 2-3 Cloves fresh garlic, chopped

Instructions
  1. Preheat your oven to 200C, Line a large baking tray with baking paper ( or 2 smaller sized trays) and drizzle with Olive Oil.
  2. Chop your potatoes, Pumpkin into small cubes and your chop your red capsicum and onion. Place all vegetables onto your tray and place in your hot oven for 10 minutes.
  3. Season your lamb with salt and pepper. Sprinkle your garlic, rosemary and smoked paprika all over your lamb. Drizzle with some olive oil. After 10 minutes, remove tray from oven and place your lamb chops or fillet on the tray and place back into your oven.
  4. Wash your broccolini and beans. and after 15 minutes, remove your tray from oven and scatter them on top of your lamb and vegetables, then place back into your oven for a further 10-15 minutes.
  5. Remove your tray from the oven, crumble your Feta all over then serve!
