Leftover Quick Chicken Curry

Using your leftover roast chicken can provide you with a quick meal on another night. And this quick curry is no exception.

It will take you 20 minutes to get this on the table, and in my book, that’s a winner, winner, chicken dinner! This curry cuts down on some of the steps and time to making a curry, as well as the number of spices.

Ingredients
  • 1 Onion, finely chopped
  • 3 cloves fresh garlic, chopped
  • 1 tbs Fresh ginger, grated
  • 1 tin crushed or chopped tomatoes
  • 1 cup chicken Stock
  • Leftover Roast Chicken
  • 2-3 cups chopped mixed vegetables
  • Spice Blend- use two teaspoons each of garam masala, ground coriander and ground cumin.
  • Serve with; Fresh corrainder and Natural Yoghurt

Instructions
  1. Heat about two tablespoons of coconut oil or Ghee in a large heavy-based saucepan. Gently fry the chopped onion, garlic and ginger.
  2. Add the spices and ensure that they are well mixed with the onion mixture. Fry for one minute. Add the chopped tomatoes. Stir well and cook for another minute or so.
  3. Add the chicken stock. Bring to the boil and simmer. Add your chopped vegetables and cook for 5-7 minutes.
  4. Add the roasted chicken and warm through. Serve with steamed rice/ cauliflower rice and sprinkle over a little fresh coriander and some Natural Yoghurt. Simple and quick!!
