Buckwheat Pancakes- Very simple, light, fluffy, gluten & Sugar FREE

These simple fluffy pancakes are not only sugar and gluten free, but they only require a few simple ingredients and are quick to make- great for a simple weekend breakfast, or make up a double or even triple batch on the weekend for an even quicker breakfast on your busy weekday morning- all you need to do, is heat and eat!

No sugar was used in these light and fluffy pancakes, but if you add maple syrup and/or fruit to your toppings, this will give you some sugar, but not refined. The maple syrup and fruit will give you the sweetness you may yearn for, but with the added bonus of fibre and nutrients to nourish and satisfy!

The buckwheat flour gives it a lovely nutty flavour and you can use whatever milk you can tolerate- this recipe has almond milk, but you can vary this.

Get creative with your toppings. I sometimes place little bowls of different toppings for the family or guest to create their own, like nuts, seeds, different fruits and yogurts- kids love this.

Ingredients
  • 2 large eggs, preferably free range & organic
  • 1 cup Buckwheat Flour
  • 2/3 cup Almond Mlik you can use whatever milk you tolerate
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 tsp Coconut Oil *you can use other oils, but I prefer coconut oil for these pancakes

Instructions
  1. In a bowl, add your dry ingredients- buckwheat flour, baking powder and salt. Whisk together.
  2. in a separate bowl or dish, whisk together your milk and eggs. then add your liquid ingredients to your dry ingredients and whisk till a smooth batter forms.
  3. Place a frying pan on stove and heat with your coconut oil. Once heated to a moderate heat, use a large spoon or small soup ladle and pour batter ( approx. 2 tablespoons or 1/2 soup ladle) into pan and fry on one side for approximately 30-40 seconds or until bubble start to appear, then gently flip over and cook the other side for same time.
  4. Transfer your cooked pancakes to a warmed plate and cook the rest of your batter. Once you have cook all the pancakes serve with your favourite toppings
  5. Simple, quick, delish, nutrish!
